We started making homemade venison jerky about 5 years ago ,it turned out great and we have been doing it ever since.
We will generally do all the grinding for the hamburger, sausage and jerky at the same time as we have a manual meat grinder and they are a bugger to clean so it is best to get it all done in one shot.

You could do this all without additional equipment, such as slice the meat thin, marinade it and cook it in the oven but we are getting pretty lazy about these things and once you buy this  equipment it will last for years to come,plus ground venison is super quick and easy, so here are a few things you might want to purchase if you are going to make your own venison jerky every year.

works but you need to make an informed decision. needs to be screwed to a chopping block or hard surface. Very heavy. Need to be very strong to churn meat through grinder. hard to prevent rust after cleaning; big issue. Best to buy an electric model but still will have rust problem. Rust in any food can be a big issue.

This product is difficult to use, was covered in machine oil when it arrived and does not properly grind meat....what else...the seller, [...], makes it very difficult to return. I think it is poorly made, perhaps the knife part is not sharp enough?? I don't know, but WHAT A MESS!! it just mashed the meat and made a bloody mess. I don't eat meat. I purchased this to make nut butters, hummus, vegetable patties for faux meats, and so on. So far so good. Once screwed on the table it is a breeze to grind carrots, broccoli stems, pecans, and such. The mixture I made was more like a thick paste. There were very small - about 1 mm - size bits of vegitative matter left over. I think the holes are 3 mm but food is cut up and squished before going out those holes. I cannot compare this to seed grinders in their abilities to make nut butters. Attaching and removing the device is a hassle for cleaning. I will bring a bucket to it next time rather than remove it. Also the device is covered in machine oil when it is delivered. Other than that the product is great.

The only drawback to this unit is the cutting blade. It is too easy to put in on backwards, which can damage the machine. This is really stupid engineering. Otherwise, it grinds nice. It is noisy!!!

Used the grinder and found it very satisfactory. Our old grinder was a 2 star - this is definitely a 5 star. Don't be afraid to order this grinder.

I have only used it once but was vary happy with the results. Looking forward to further use. clean up was quick and easy.

Product well made, with cold meat grinds fast. Have ground only lean cuts of beef with little fat. Easy to clean and re-assemble. Metal parts are sturdy. Looks good, works good.

I have looked all over for a good meat grinder at a good price. Lots of grinders are much more in cost but less in watts. This is a 800 watt and seens to have good power. Time will tell how good it is. It cleans up very easy and grinds just fine. For the money you can't go wrong. So I give it a four star review. I saw where some said it is loud, but it is not that bad, it's because is has more power than smaller ones.

We have had our food dehydrator for about 10 years now and again can't justify the expense of buying a new one, yet! My advice to you is if you are buying new, get a dehydrator with the fan in the rear, it cuts your drying time in half and there is no drippings falling on the fan in the bottom of the tray. The Excalibur 2500 is the top of the line and will be on our wish list also.

Love it!! Use it more than I thought I would!! Not just 4 dehydrating, you can raise bread dough, make yogurt & cheese with it. I bought the nine tray , each tray holds about a pound of food , it is an excellent dehydrator!!

I researched a lot of different dehydrators before settling on this one and I'm glad I did. I should preface this by saying I've only used this for jerky so far but it's worked great. This style, as opposed to other styles with the fan at the bottom dries much more evenly so you don't have to keep switching trays around. It's not incredibly loud either which is nice. I can't wait to try drying some fresh fruits and making some roll-ups in the future.

We have been very happy with this dehydrator so far. It is easy to use, easy to clean, and not too noisy :)

My husband loves his new Excalibur! I had trouble deciding between the 5 or 9 tray models, but I'm glad I purchased the 5. It is huge! It easily holds twice the amount of our old 5 tray Nesco due to its square design. It works just as advertised - heats evenly, thoroughly, and holds an impressive amount of meat.

The Excalibur far exceeds my expectations! I have been using the "round" dehydrators for years, and while they a great for the price, you get what you pay for. I generally like to make a lot dried foods at once, with round dehydrators I was constantly swapping trays in an attempt to get everything to dry at the same rate. With the Excalibur the process is simple, about half way though the drying process I rotate trays 180 degrees and it has always come out perfect. I could not be more satisfied.

This gadget is "killer". I had made jerky by hand cutting strips for the dehydrator up until now. After looking at the reviews of various products, I opted for the gun (which might better be called the bazooka). It works as advertised. The hand cutting was laborious if you wanted to make much in terms of quantity to share with friends, relatives and the homeless soliciting at intersections. It will lay down strips quickly and fill snack stick diameter casings in a heartbeat. Instructions are clear, loading is easy and cleanup quick. It may not be the traditional approach, but I'll let those hunting for the raw materials use that method. This is my first and only Jerky Gun. I have been making beef/venison jerky for the past 10 years for personal consumption. I have always been slicing the meat that I use and I never thought there was and easier way to make this great snack. Until I saw a mention of a Jerky Gun while surfing the internet. I received a free sample of this jerky spice when I bought my dehydrator, and found that it easily made excellent jerky. I use the 97/3 extra lean hamburger and can turn out a batch of jerky overnight that tastes better than any store-bought jerky. There are other flavors of jerky spice available, but I think the original flavor would be almost impossible to beat.

The hot and spicy sauce was apparently created from the fires of Mt.Doom, or some plasma laced meteorite. I wasn't paying attention when I made the jerky with the hot n spicy, and didn't get the spice/cure evenly applied. Apparently in the 1.25 pounds I was curing, about 7/10ths of the spice got on one slab of meat. So suffice to say I witnessed my tongue dissolve into thin air as my mouth exploded in pain. 4 bottles of water later, I pulled a tom hanks and was wiping my tongue with a towel. Maybe they took "spirit of habanero" and cloned it, intensified it, and poored some sulfuric acid crystals on there for good measure. All kidding aside, the Original is top notch --- I prefer it over any store-bought ready made jerky. Flavor is great. The other two are good too, but the spce pack gets a 5 star based purely on the taste of the original flavor. I wish I could buy a box of just the original.

This is a great basic seasoning for beef jerky. It is hard to find near us, so it's good that we can get it through Amazon. Using it with his recipe for beef jerky, my husband makes a terrific tasting product--not too spicy. Very easy to work with. Excellent value for the price.

The spice and cure packets have good flavor. Spice powder has hardened inside packet.

Make Your Own Venison Jerky Recipe

It is best to mix and match the seasonings to your own taste. Once you see how easy it is to make your own venison Jerky or Beef Jerky or any kind of Jerky. You will see the only complicated decision is which combination of seasonings you want to throw in it.

There are really only a handful of seasonings you need to mix, depending on your taste, spicy, sweet or a combination of both.

Common Jerky spices are..

  • black pepper

  • chili powder

  • garlic powder

  • cayenne pepper

  • onion powder

  • liquid smoke

  • soy sauce

  • Worcestershire sauce

  • Frank's red hot sauce

  • Teriyaki sauce.

  • McCormick montreal steak seasoning

  • lemon pepper

  • brown sugar

  • maple syrup

  • ketchup

  • kosher salt

  • molasses

  • red pepper flake

  • ginger

  • dry sherry

  • Chinese five-spice powder

  • cider vinegar

Try different combinations of these spices mixed with your ground venison, try at least 3 different combo's and mix it well. store it in the fridge overnight. Take it out the next day, run it through your jerky gun and set it in your dehydrator for a day and that is all there is to it folks, nothing better than homemade venison jerky, I guarantee it.
